Soft almond cake


Good afternoon! Hard to decide what to cook, this Summer, with this changing weather... well at least we're not suffering from too much heat, these days are more Springtime like. In any case, it was a long time since I tried to bake a soft almond cake without needing to use at least 4 eggs and 200g butter, but I was never satisfied of the result. It was either too low, too dry or too crunchy. This time, I got very close to my goal so I thought it was better to post it before I forget how I did it! So here it is.

100g peeled almonds
5 savoiardi (ladyfinger) biscuits
50g wheat flour
1 teasp baking powder
2 eggs
120g sugar
120cc sunflower oil
80cc milk
granulated sugar to decorate

Whip the egg whites in a bowl and leave them in the fridge while you prepare the cake. Pre-heat the oven at 160°C. Finely mix the almonds with the savoiardi and put the flour-like powder in a bowl. Add the sugar and egg yolks and mix. Alternate wheat flour (mixed with baking powder) with oil and milk, the liquid quantity may vary, you need to obtain a soft but still firm dough. Now add the eggwhites with a spatula, gently stirring with circular and from the bottom up movements. The final dough should be soft, creamy, puffy and nearly foamy. Butter a tart mold and sparkle it with flour. Pour the dough, cover it with plenty of granulated sugar and bake for about 35-40 minutes. Do the toothpick test. The final result will be crunchy outside, and tender inside. Enjoy!


Gâteau fondant aux amandes

Bonjour à tous! Difficile de choisir quoi cuisiner cet été... le temps et la temperature changent en continu; en tout cas il ne fait pas trop chaud, ce qui finalement est très agréable. A part ça, ça fasait longtemps que je cherchais de préparer un gâteau tendre et fondant aux amandes, mais sans avoir à utiliser au moins 4 oeufs et 200g de beurre... dans mes essaies passés, j'ai toujours obtenu des gâteaux soit trop bas, trop secs ou croustillants. Cette fois-ci, je crois d'être arrivée très près du bout, alors, il vaut mieux que je poste la recette avant que j'oublie comment j'ai fait! Donc, la voici.

100g amandes pelées
5 savoiardi (boudoirs)
120g sucre
50g farine
1 cuillère à thé de levure chimique
2 oeufs
120cc huile de tournesol
80cc lait
sucre granulé pour décorer

Montez les blancs d'oeufs et mettez-les au frigo. Pré-chauffez le four à 160°C. Mixez en farine les amandes et le boudoirs, versez-les dans un bol, rajoutez le sucre et les jaunes d'oeufs et mélangez. Rajoutez alternativement la farine (mélangée avec la levure), l'huile et le lait. La quantité du liquides pourrait légèrement changer; la pâte que vous devez obtenire doit être souple mais assez ferme. Rajoutez les blancs à l'aide d'une spatule, avec des mouvemens circulaires et du bas en haut. La pâte finale doit être mousseuse, enflée et onctueuse. Graissez un moule à tarte, soupoudres-le de farine, puis versez-y la pâte, couvrez-la avec plein de sucre granulé puis mettez-la au four pendant 35-40 minutes (faites le test du cure-dents). Le résultat sera un gâteau craquant à l'extérieur et fondant à l'intérieur, tout comme je l'aime! Et j'espère vous aussi!
