i fusilli al pesto di cicoria


Chicory is an excellent Winter vegetable you can find mostly everywhere at this time of year (@ my beloved Rialto of course but if you check carefully you may find some very fresh ones also at coop, depending on the day's delivery). Quite bitter, it gets sweeter when cooked.
Before supermarkets age, when it was nearly impossible to find fruits and vegetables off season, chicory and their "seasonal friends" thistles were used as a substitute of eggplants and peppers (these are my mother's memories, back to the 50's).
The recipe I'm posting today is for a quick (rare for me to have plenty of time to cook during weekdays!) and healthy pesto you can use with any kind of pasta; this time I used fusilli (short and curly shape), which grab nicely the sauce. I used this particular kind of chicory (which we call in Italian "cicoria catalogna").



For 4
1/2 a bunch of chicory (both stems and leaves)
1/2 a small onion
1 pinch of pine nuts
olive oil
30g parmesan cheese
320 g fusilli

Chop the chicory in pieces (about 5cm long); chop the onion and stir-fry them for a few minutes in a pan with 3 tbsp of olive oil. Add the pine nuts and stir-fry them with the vegetables. Lower the fire and cover with a lid; add some tbsp of water, adjust with salt and cook for about 15 minutes; check from time to time that the chicory doesn't stick to the pan.
Boil water in a pot and add salt when boiling; cook the fusilli according to instructions (usually about 10 minutes). While the pasta is cooking, mix the vegetables and pine nuts, parmesan cheese and 2 tbsp of olive oil with a hand-mixer, in order to obtain a creamy sauce (not too liquid). Keep aside 1 glass of pasta's cooking water.
Drain the pasta and season it in the pot with the sauce, stirring well; add some cooking water if the sauce is too dry. Buon appetito!

J'adore la chicorée, excellent légume d'hiver, qu'on peut trouver quasiment partout en cette saison (à Rialto bien sûr mais aussi bien à la coop, si on fait attention et on choisi les têtes avec attention). Assez amère, elle devient plus doux avec la cuisson. Avant l'age des supermarchés, quand on ne trouvait pas de légumes hors saison, les chicorées et les chardons remplaçaient les aubergines et les poivrons qu'on ne pouvait acheter qu'en plein été (ça c'est des mémoires de ma mère, directement des annèes 50). Je vais bientôt poster la recette de la parmesane de chardons, un excellent plat d'hiver! Mais passons-nous à la recette des fusilli au pistou de chicorée.
Pour 4
1/2 tête de chicorée (avec les feuilles)
1/2 petite oignon
une poignée de pignons de pin
30g parmesan
huile d'olive
320g fusilli

Tranchez la chicorée en morceaux d'environ 5cm de longeur, hachez l'oignon et sautez les légumes dans une poêle avec 3 cuillères d'huile d'olive pendant quelques minutes. Rajoutez les pignons de pin et laissez sauter. Baissez le feu, arrosez avec quelques cuillères d'eau, salez légèrement et couvrez avec un couvercle; laissez cuire pendant 15 minutes. Chauffez l'eau pour les pâtesdans une casserole, rajoutez du gros sel quand elle bout, cuisinez les fusilli selon instructions (normalement, environ 10 minutes). Gardez un verre d'eau de cuisson.

Pendant la cuisson, mixez les légumes, parmesan et 2 cuillères d'huile d'olive avec un mélangeur afin d'obtenir une sauce onctueuse (pas trop liquide). Egouttez les fusilli et assaisonnez-les avec la sauce, en rajoutant de l'eau de cuisson si le pesto est trop sec.
