boiled meat and pumpkin croquettes


Now Autumn has come! It's strange as each year we can have exceptionally warm days, extra Summer-like weather, but on the 15th of October... time to turn the heating on, at least in the evening. So I prepared my first stock of the season (brodo con tortellini) and, to finish what was left of boiled (beef) meat, these yummy croquettes. In the pictures, I prepared as a side dish some sautéed chicory and frittata... but here we go with the croquettes.

for 9 croquettes
300g boiled beef meat
300g pumpkin pulp
1/8 of a small onion
50g grated emmenthal cheese
1 egg
breadcrumb
salt
parsley
sunflower or peanut oil for frying

Steam-cook the pumpkin, chopped in dices, for about 15 minutes. Chop the boiled beef in dices as well. Finely slice the onion and parsley. Put all of them in a bowl and add the other ingredients apart the breadcrumbs. Mix with a hand mixer, then stir with a spoon and add the necessary breadcrumbs to obtain a soft but not too sticky dough. Make the croquettes (I usually make them in an oval shape, but you can make them round if you prefer) and cover them with breadcrumbs. Fry in hot vegetable oil, take them out with a skimmer and lay them on a dish with paper towel. Let them cool for some minutes and serve. Enjoy!

Quenelles de viande bouillie et potiron
Bonjour à tous! L'automne est arrivé, enfin. C'est bizarre comme chaque année nous assistons à plusieurs jours de chaleure exceptionnelle, d'été prolongée... mais le 15 octobre, punctuel, c'est bien le temps d'allumer le chauffage, au moins le soir. Donc j'ai préparé mon premier buillon (brodo con tortellini) de la saison, et ces quenelles avec ce qui était resté de la viande. Dans la photo, je les ai servies avec de la chicorée sautée, mais occupons-nous des croquettes!

300g boeuf bouilli
300g pulpe de potiron
1/8 d'une petite oignon
50g emmenthal (ou gruyère) rapé
1 oeuf
chapelure
sel
persille
huile de tournesol ou cacaouhettes pour la friture

Hachez le potiron en dés, cuisinez-le à la vapeur pendant 15 minutes. Hachez la viande, puis l'oignon et le persille. Mettez tous les ingredients sauf la chapelure dans un bol et mixez à l'aide d'un mixeur. Rajoutez assez de chapelure, en remouant avec une cuillère, afin d'obtenir une masse souple mais pas trop collante. Formez les quenelles et couvrez-les avec la chapelure. Friez dans l'huile chaud, rétirez-les à l'aide d'une écumoire, puis posez-les sur une assiette avec du papier et laissez refroidir quelques minutes, servez et dégustez!

leek and carpaccio wraps



I hope you spent a nice Sunday! Here this extended Summer made this month of September the highest peak ever... people is filling up the beaches more than in July, even if the resorts are already closed for the season. So, until the next rain which is expected for next Thursday, our menus are again on the Summer side, which made me think of these light leek and carpaccio wraps.

For 4
100 g beef carpaccio per person
1 small leek
150 g sliced ham
olive oil
1/2 glass white wine
toothpicks

Gently wash and steam-cook the leek for about 10 minutes. Slice it in pieces, about 6 cm long, and then cut it into halves along the length. To form each wrap, take a slice of carpaccio, place a slice of ham and a piece of leek. Roll the 3 ingredients and secure the wrap with a toothpick. If you have some leek left, stir-fry it in a pan with a little olive oil, then add the wraps, salt and sprinkle with white wine. Let it cook for a few minutes... ready! In the pictures below, here's how I prepared them: accompanied by couscous and ratatouille.




Tournedos de carpaccio et poireaux

J'espère que vous avez passé une bonne dimanche! Ici, cet été prolongé a fait de ce mois de septembre une période de très haute saison, les plages sont plus bondées de monde maintenant qu'au mois de juillet, même si les établissement sont fermés... Alors, en attendant la pluie qui est annoncée pour le prochain jeudi, nos ménus sont encore sur un coté estivale, ce qui m'a donné l'idée de ces rouleaux de carpaccio et poireaux. Même pas besoin de le dire, faciles à faire et très rapides. On y va!

Pour 4
100g de carpaccio de boeuf par personne
150g de jambon en chiffonade
1 poireau
huile d'olive
1/2 verre de vin blanc
cure-dents

Lavez et cuisinez le poireau à la vapeur pendant environ 10 minutes. Coupez-le en tranches d'environ 6 cm de longueur, puis tranchez-les en 2 dans le sens de la longueur. Préparez les tournedos: allongez une tranche de carpaccio; posez-y une tranche de jambon, puis un morceau de poireau. Roulez les ingrédients et fermez à l'aide d'un cure-dents. S'il vous reste du poireau, sautez-le dans un poêle avec de l'huile d'olive, puis rajoutez les tournedos, salez et baignez avec du vin blanc. Cuisinez pendant quelques minutes (le carpaccio est très rapide à cuisiner)... c'est prêt! Dans la photos dessus, ma suggestion de préparation: avec du cous-cous et de la ratatouille.

Cottage chicken stew


Hi everybody! I was checking the filed recipes in this blog, and I noticed that I posted 1 meat dish recipe against 13 desserts... quite disproportioned. It's true that I prefer fish to meat, I use a lot of vegetables and prepare many of what we call in Italian "primi piatti" (first courses, mainly pasta, rice or soup), but still! So here's a chicken stew a prepared a few days ago, easy to make -as usual- and tasty.

For 2/3
6 chicken thigh
1 frankfurter
4 carrots
1 spring onion
1 glass beer
a few leaves of sage, laurel and a sprig of rosemary
4 tbsp tomato purée

Finely chop the spring onion and carrots, together with the herbs. Stir fry them a couple of minutes in a high sided pan with a little olive oil, then add the chicken thighs and roast them on all sides. Slice the frankfurter and add it to the chicken, stir-fry with the rest, then add salt, pour the beer, the tomato purée and stir. Lower the fire, cover with a lid and let it cook, stirring from time to time, for about 2 hours.

Casserole rustique de poulet

Bonjour! Je regardais les recettes archivées, et j'ai remarqué que je n'ai posté qu'une recette de viande, contre 13 de desserts... ça ne va pas. Il est vrai que je préfère le poisson, que j'utilise beaucoup de légumes et que je prépare beaucoup de ceux qu'on appelle en italien les "primi piatti" (sorte d'entrées, à manger dans des bols, mais des vrais plats en réalité, normalement des pâtes, du riz ou une soupe), mais quand même! J'ai alors pensé de poster cette recette de casserole que j'ai préparée il y a quelques jours. Il est - comme d'habitude- très simple à préparer, et assez savoureuse.

Pour 2/3
6 cuisses de poulet
4 carottes
1 oignon fraiche
1 frankfurter
quelques feuilles de sauge, laurier et un brin de romarin
1 verre de bière
4 cuillères à soupe de purée de tomate

Hachez finement les carottes, oignon et les herbes. Faites-les sauter dans une casserole avec un filed d'huile d'olive. Rajoutez les cuisses de poulet et faites dorer sur tous les cotés. Tranchez le frankfurter et rajoutez-le au poulet, faites sauter encore. Salez, versez la bière et la purée de tomate, remuez, baissez le feu et couvrez avec un couvercle. Laissez cuisiner, en remuant de temps en temps, pendant environ 2 heures.
