cappelletti day!


Merry Christmas to you all... time to work on Christmas meal! My task is Christmas lunch tomorrow, so we'll follow the tradition: cappelletti in brodo, roasted capon with mashed potatoes and vegetables, panettone etc. To follow the tradition, we're making home-made cappelletti, according to aunt's Luciana recipe, who's after granny Ada's one and so on... for a team of 3, it's a whole morning work, but usually worth the effort. If you want to try, here's the recipe! I calculate about 20 cappelletti (in stock soup) per person.

For 100 cappelletti
For fresh pasta
400g wheat flour
3 eggs
2 halves eggshells water
a pinch of salt

for filling
200g minced beef
200g minced veal
200g minced pork
1 onion
80g butter
olive oil
nutmeg

Chop the onion. Melt the butter and gently fry it in a high sided pan; add the meat and stir well in order to break all of the lumps. Drizzle with olive oil from time to time and let it cook, no lid, until all of the liquid has been absorbed. Season with salt and generously dust with nutmeg. 3rd generation variation: add a small pinch of cinnamon. Let the filling cool at room temperature.

For pasta: Pour wheat, eggs, water and salt in a bowl and start kneading by hand, you have to work it well so that all of the egg yolks are absorbed. Pinch a piece of dough, spread it with a rolling pin and then pass it through the pasta maker, thick #4. If the foil breaks, add some flour and pass it through a thicker roll (#2 or 3). Cut 100 round with a 5cm diametered glass, then make the cappelletti: put a little filling in the center, close it in half  in a 1/2 moon shape, it's VERY IMPORTANT to perfectly seal the edges, then roll it around your index finger (kids are perfect for this, they have just the right size!) and close the 2 edges in order to obtain the shape in the picture. If the foil gets dry, wet your fingers with water in order to soften the rounds. Cook them in a good stock for about 10 minutes and season with plenty of grated Parmesan cheese. Joyeux Noël à vous tous... aujourd'hui, on prépare les cappelletti pour le déjeuner de demain... à trois, c'est le travail d'une matinée, mais normalement ça vaut la peine! C'est la recette de ma tante Luciana, qui à sa fois suive celle de mamie Ada etc etc et on va en arrière avec les générations... Si vous voulez essayer, voici la recette; moi, je calcule 20 cappelletti par personne (en soupe de bouillon).

Pour les pâtes (environ 100 cappelletti)
400g farine
3 oeufs
1 démi coquilles d'oeuf d'eau
pincèe de sel

Pour la farce
200g beouf haché
200g veau haché
200g porc haché
80g beurre
huile d'olive
sel
muscade

Hachez l'oignon. Fondez le beurre dans une casserole, puis faites y blondir l'oignon et rajoutez la viande, remouez bien afin de casser tous les grumeaux. Rajoutez un filet d'huile d'olive de temps en temps si la viande est trop sèche et laissez cuisiner jusqu'à quand tout le liquide a été absorbé. Salez, rajoutez un saupoudeage généreux de muscade (ma touche personnelle: une toute petite pincée de cannelle) et laissez refroidir à temperature ambiante.

Pour les pâtes: versez la farine, les oeufs, l'eau le sel dans un bol et petrissez bien à la main, afin que les oeufs soient bien absorbées. Détachez une pincée de pâtes, roulez-le avec un rouleau, puis passez-le dans la machine à pâtes, épaisseur 4. Si les pâtes s'écaillent, rajoutez de la farine et passez-les à un épaisseur plus épais (3 ou 2). Coupez 100 ronds à l'aide d'un verre de 5cm de diamètre, puis mettez un peu de viande au centre de chaque ronde, fermez-le en 2 (en forme d'une demi-lune), ATTENTION c'est fondamentale de bien sceller les bords, puis roulez la démi-lune autour de votre indez et fermez les extrémités pour former le cappelletto (les enfants sont parfaits pour ça, ils ont la bonne taille!). Si les pâtes deviennent trop séches, mouillez vos doigts avant de former le cappelletto. Ils se cuisinent en environ 10 minutes en bouillon, puis assaisonnez avec une généreuse pincée de Parmesan rapé. BUON APPETITO E BUON NATALE!

La vellutata di zucca e radicchio

Dear guests, I hope you spent a very Happy Christmas with your families. We enjoyed welcoming people who decided to spend their Christmas day in Venice, and we're now thinking of our guests for New Year's Eve! If you feel stuffed after Christmas lunch, Boxing Day, sweets, Panettone etc. why not trying this warm and light soup, before facing New Year's dinner?
For 4
1/2 bag chopped pumpkin (about 200g)
2 carrots
1 potato
1/2 tomato
1/2 yellow pepper
1 bunch of Treviso chicory
broth
olive oil
coriander powder

Peel the carrots and the potato, chop into large pieces, slice the tomato and the pepper; put all of the vegetables in a pot, cover with broth and bring to a boil; lower the fire and cover with a lid. Cook until all of the vegetables are soft. Meanwhile, gently wash the chicory (radicchio di Treviso), cut the stem in order to separate the leaves and roast them in a frying pan where you have previously sparkled the bottom with salt. The leaves should remain tender and "fleshy". Keep them aside.
Now blend the soup in the pot with a handmixer, it should be creamy. Add salt if necessary, sparkle with coriander powder and stir well. Add the chicory leaves and stir. Serve hot and season each portion with olive oil and grated parmesan cheese (as usual!).

Chers amis, j'espère que vous avez passé un Joyeux Noël avec vos familles. Nous sommes ravis d'avoir accueilli nos hôtes qui ont choisi de passer leur Noël à Venise, et nous attendons maintenant les gens qui vont venir pour le Nouvel An! Si vous avez exageré avec le repas de Noël, du 26, les friandises, le panettone etc., pourquoi ne pas essayer ce potage léger, avant de faire face au Nouvel An et son petit salé aux lentilles?

Pour 4
1/2 sachet de potiron en morceaux (toujours à Rialto, environ 200g)
2 carottes
1 pomme de terre
1/2 tomate
1/2 poivron jaune
1 bouquet de chicorée de Trevise (radicchio di Treviso)
bouillon
huile d'olive
coriandre en poudre

Pelez les carottes et la pomme de terre, coupez-les en gros morceaux. Coupez la tomate, le poivron, mettez tous les légumes dans une casserole, couvrez avec le bouillon et faire bouillir. Baissez le feu, couvrez avec un couvercle et laissez cuisiner jusqu'à quand tous les légumes seront tendres. Entre-temps, tranchez la tige de la chicorée afin de libérer les feuillez; lavez-les doucement, sechez-les et faites-les cuire dans une poêle antiadhésive, déjà chaude, avec le fond saupoudré de sel. Les feuilles doivent rester tendres et charnues. Gardez-les àpart. Mixez la soupe dans la casserole avec un mixeur, ajoustez de sel et rajoutez une pincée de coriandre en poudre; le potage doit être cremeux et onctueux. Rajoutez les feuilles dans la casserole et remuez. Servez chaud et assaisonez chaque assiette avec un filet d'huile d'olive et parmesan rapé (comme d'hab!).
