My pastiera for Easter


I hope all of you is spending a Happy Easter wherever you are! Each year I prepare a traditional cake for Easter; last year it was the "treccia pasquale", this year I found the recipe (on this month's issue of Sale e Pepe) for the "pastiera", a gorgeous cake from Naples, which is anyway largely appreciated in all Italy. It's actually less long to make than I thought, so give it a try! There are some particular ingredients which give this cake its distinctive flavour: natural orange flower aroma and cooked wheat grains, which you can easily find at Mascari, THE drugstore in Venice, where you can find all kinds of wines, spices, sweets and confectionary ingredients. Name it, they have it!

For 6
For pastry
280g wheat flour
140g butter
140g sugar
1 egg and 1 yolk
salt

Put in the mixer flour, salt and cold butter cut in pieces; mix until the butter is crumbled; add sugar and eggs and mix some more; when you get a homogeneous pastry, work it by hand and make a ball; cover it with cellophane and put it in the fridge.

For wheat filling
1 can cooked wheat grains (400g)
70cc milk
a small piece of butter
1/2 orange and 1/2 lemon peel (organic)
1 tbsp sugar
1 vanilla bean

Drain and rinse the wheat, put it in a pot with milk, butter, sugar, orange and lemon grated peel and vanilla; stir and cook for 10 minutes, until you get a thick, creamy mass. Let it cool.

For cream filling
180g ricotta cheese
130g sugar
2 eggs
2 tbsp orange flower natural aroma
1 pinch cinnamon
50g candied fruits (cedar, orange and pumpkin if you find it)

Beat ricotta and sugar until shiny; whisk eggwithes to have a meringue and store it in the fridge; add yolks to the ricotta and whisk; then add the wheat filling (discard vanilla bean), orange flower aroma, cinnamon and candied fruits; finally add meringue with a spatula.

Pre-heat the oven at 180°C; roll the dough onto a bakling paper foil (3-4 mm thickness) and lay it onto a round, 24cm diameter baking dish (the best would be an aluminium one), previously greased and sparkled with flour; cut the exceeding dough. Fill in with the cream, cut the remaining dough in stripes and lay them on the cream. Bake for about 50 minutes and leave it for a day before eating it, if you can! If you prepare it today, it will be perfect for Pasquetta (Holy Monday). Again all of my Best Wishes for a Joyful Easter day!

Ma pastiera pour Pâques

Bonjour à tous, j'espère que vous êtes en train de passer une joyeuse journée de Pâques, où que vous soyez! Chaque année, je m'amuse à préparer un gâteau traditionnel pour Pâques, l'année dernière c'était la tresse, cette année j'ai trouvé la recette (sur le numéro d'avril de Sale e Pepe) de la pastiera napoletana, un superbe gâteau de Naple, très apprécié aussi dans le reste d'Italie. Il est moins longue à préparer que je le croyais, alors pourquoi pas ne pas essayer? Il y a par contre des ingrédients assez spéciaux, qui donnent à ce gateau son parfum, mais vous pouvez facilement les réperer chez Mascari, L'épicerie de Venise, où vous trouverez toutes sortes de vins, épices, friandises et ingrédients de confiserie. Il s'agit en tout cas du blé cuit et de l'eau de fleurs d'oranger. Alors, au travail!

Pour 6 
Pour la pâte

280g farine
140g beurre
140g sucre
1 oeuf et 1 blanc
sel

Mettez dans le mixer la farine, une pincée de sel et le beurre, froid, coupé en morceaux; mixez jusqu'à quand le beurre est en miettes, puis rajoutez le sucre, oeufs et mixez encore; quand la pâte est homogène, travaillez-la à la main pour obtenir une balle ronde; couvrez-la avec du cellophane et mettez-la au frigo.


Pour la crème de blé
1 cannette de blé cuit (400g)
70cc lait
une noix de beurre
la peau rapée de 1/2 orange et 1/2 citron (bio)
1 cuillère à soupe de sucre
1 gousse de vanille

Egouttez et rincez le blé; versez-le dans une casserole, rajoutez le beurre, sucre, lait, écorce d'orange et citron et le gousse de vanille; remouez et cuisinez à feux doux pour 10 minutes, jusqu'à quand vous obtiendrez une crème onctueuse. Laissez refroidir.

Pour la crème de ricotta
180g ricott
130g sucre
2 oeufs
2 cuillères d'eau de fleurs d'oranger
1 pincée de cannelle
50g fruits confits (cèdre, orange et potiron si vous la trouvez)

Montez la ricotta avec le sucre jusqu'à quand vous obtiendrez une crème lucide; montez les blancs à neige et mettez-les au frigo; rajoutez les jaunes à la ricotta et montez; rajoutez la crème de blé (rétirez le gousse de vanille), le fruits confits, la cannelle et l'eau de fleur d'oranger; rajoutez enfin les blancs à neige avec une spatule.

Pré-chauffez le four à 180°C; roulez la pâte à 3-4 mm d'épaisseur sur une feuille de papier de cuisson, posez-la sur un moule rond de 24cm de diamètre, graissé et saupoudré de farine; coupez la pâte en excès. Remplissez le gateau avec la crème, coupez la pâte restante en bandelettes et mettez-les sur le gâteau. Mettez au four pour 50 minutes et laissez réposer pour une journée. Si vous la préparez aujourd'hui, elle sera parfaite pour Pasquetta, le lundi de l'Ange. Encore tous mes voeux de Joyeuses Pâques!

Fritole or Venetian Carnival fritters



Carnival has started and, together with it, fritole! I've always wanted to make them, but didn't find a good recipe. This year, I consulted both my new cooking bible "history of Venetian cooking", where you can find the original, XVIII century dated, recipe, as well as other website and at the end I put them toghether with this result

120g flour (some more could be needed if the dough is too liquid)
150cc warm water (I tried with milk, not bad at all!)

50g sugar + some more to dust (I liked them like this, my husband would like them sweeter, so you can add a little if you like)
50g raisins

30g pine-nuts
15g yeast
vegetable oil for deep-frying
a sip of grappa

Melt the yeast in warm milk, add flour little by little, sugar and grappa. Cover with a cloth and let it raise in a warm place until the dough doubles its volume. Meanwhile, soak the raisins in a little warm water and a sip of grappa. When the dough is ready, drain the raisins and add them to the dough, together with the pine-nuts. Use a tablespoon to make the fritole (fritters) and deep-fry them until well golden. Pay attention as it will easily happen that the inside remains raw, which is not good, so let them cook well (without burning them of course!).
Drain them and lay them on a dish with blotting paper and generously dust them with sugar. Serve hot and BUON CARNEVALE!

Fritole de la carnaval
Désolée je n'arrive à poster la version française qu'aujourd'hui! On est maintenant en plein carnaval, et comme chaque année on passe d'un café à l'autre pour choisir qui fait les meilleures "fritole"... cette année, grace à ma nouvelle Bible coulinaire, "Histoire de la cuisine vénitienne", plus d'autres recettes trouvées sur internet, j'ai voulu préparer ma version, la voici:

120g farine de blé
150cc eau tiède (j'ai essayé avec du lait, pas mal!)
50g sucre + d'autre pour saupoudrer (pour moi c'est bon comme ça, mon mari les aimes plus sucrées, donc vous pouvez en mettre un peu plus si vous voulez)
50g raisins secs
30g pignons de pin
15g levure
huile végétale pour la friture
une "goutte" de grappa

Dissoudez la lévure dans le lait, rajoutez la farine petit à petit et la grappa. Couvrez avec un chiffon et laisser lever la pâte dans un endroit tiède, jusqu'à quand elle a doublé son volume. Laissez tremper les raisins secs dans un peu d'eau et grappa. Quand la pâte est prête, égouttez les raisins et rajoutez-les à la pâte avec les pignons. Chauffez l'huile, formez les "fritole" à l'aide d'une cuillère à soupe et faites-les bien dorer. Attention car il est très facile que l'intérieur reste cru, ce qui n'est pas bon! Veillez donc à que la cuisson soit bien terminée (test pas trop professionel: goutez la première pour tester le temps de cuisson!). Roulez les fritole dans du sucre, servez chaud et... BON CARNAVAL!

Amaretto and chocolate parfait



I prepared this parfait a few days ago (found the recipe on December's issue of Cucina Moderna), excuse me for the picture, but when I realized it was unfocused, the parfait was gone already... so I'm adding a festive picture of Casino' di Venezia with its blue sky and stars... to wish all of you a great and Happy New Year 2012!

70g crushed amaretti biscuits
50g dark chocolate drops
90g sugar
20g corn starch
120cc milk
5 egg yolks
240cc milk cream
cocoa to dust

Whisk milk cream in a bowl and put it in the fridge. Cover a plum cake mold with cellophane. Mix sugar and corn starch in a pot; pour milk little by little then add the egg yolks, one by one, stirring well, and warm the mixture avoiding to reach boiling point. Pour the cream into a bowl, plunged into another larger bowl with icing water, in order to cool the cream rapidly.  Whisk the cream. Add the whipped cream with a spatula to the eggs cream, with circular movements, and finally add crushed amaretti and chocolate drops. Pour the mixture into the mold, cover with cellophane and refrigerate in the freezer for at least 12h. When serving, dust each portion with cocoa, and, to make it more festive, add a chocolate coin. BUON ANNO A TUTTI!



Parfait aux amaretti et chocolat
J'ai préparé ce parfait gourmand il y a quelques jours (j'ai trouvé la recette sur le numéro de décembre de Cucina Moderna), désolée pour la photo, mais quand j'ai réalisé qu'elle était floue le parfait était déja parti... alors, je vous poste aussi une photo du Casino de Venise, avec son ciel bleu et les étoiles, pour vous faire tous mes meilleures voeux pour un Joyeux 2012!

70g amaretti émiettés
50g pépites de chocolat
90g sucre
20g amidon de mais
120cc lait
5 jaunes d'oeuf
240cc crème de lait fraiche
cacao pour saupoudrer

Montez la crème de lait pour avoir une chantilly et mettez au frigo. Recouvrez un moule à plumcake avec du cellophane. Mélangez le sucre et l'amidon dans une casserole, versez-y le lait, petit à petit, en remouant, puis les jaunes d'oeuf, un par un. Chauffez la crème sans la faire bouillir. Versez-la dans un bol qui à sa foit est plongée dans un autre bol avec de l'eau glacée, pour faire refroidir la crème rapidement. Montez bien la crème avec des fouettes. Rajoutez la chantilly avec une spatule, avec des mouvements circulaires, puis les amaretti et le chocolat. Versez le mélange dans le moule, couvrez-le avec du cellophane et mettez au congélateur pendant au moins 12h. Au moment de servir, saupoudrez chaque portion avec du cacao et, si vous voulez, posez une pièce de chocolat pour chacun. BUON ANNO A TUTTI!

cappelletti day!


Merry Christmas to you all... time to work on Christmas meal! My task is Christmas lunch tomorrow, so we'll follow the tradition: cappelletti in brodo, roasted capon with mashed potatoes and vegetables, panettone etc. To follow the tradition, we're making home-made cappelletti, according to aunt's Luciana recipe, who's after granny Ada's one and so on... for a team of 3, it's a whole morning work, but usually worth the effort. If you want to try, here's the recipe! I calculate about 20 cappelletti (in stock soup) per person.

For 100 cappelletti
For fresh pasta
400g wheat flour
3 eggs
2 halves eggshells water
a pinch of salt

for filling
200g minced beef
200g minced veal
200g minced pork
1 onion
80g butter
olive oil
nutmeg

Chop the onion. Melt the butter and gently fry it in a high sided pan; add the meat and stir well in order to break all of the lumps. Drizzle with olive oil from time to time and let it cook, no lid, until all of the liquid has been absorbed. Season with salt and generously dust with nutmeg. 3rd generation variation: add a small pinch of cinnamon. Let the filling cool at room temperature.

For pasta: Pour wheat, eggs, water and salt in a bowl and start kneading by hand, you have to work it well so that all of the egg yolks are absorbed. Pinch a piece of dough, spread it with a rolling pin and then pass it through the pasta maker, thick #4. If the foil breaks, add some flour and pass it through a thicker roll (#2 or 3). Cut 100 round with a 5cm diametered glass, then make the cappelletti: put a little filling in the center, close it in half  in a 1/2 moon shape, it's VERY IMPORTANT to perfectly seal the edges, then roll it around your index finger (kids are perfect for this, they have just the right size!) and close the 2 edges in order to obtain the shape in the picture. If the foil gets dry, wet your fingers with water in order to soften the rounds. Cook them in a good stock for about 10 minutes and season with plenty of grated Parmesan cheese. Joyeux Noël à vous tous... aujourd'hui, on prépare les cappelletti pour le déjeuner de demain... à trois, c'est le travail d'une matinée, mais normalement ça vaut la peine! C'est la recette de ma tante Luciana, qui à sa fois suive celle de mamie Ada etc etc et on va en arrière avec les générations... Si vous voulez essayer, voici la recette; moi, je calcule 20 cappelletti par personne (en soupe de bouillon).

Pour les pâtes (environ 100 cappelletti)
400g farine
3 oeufs
1 démi coquilles d'oeuf d'eau
pincèe de sel

Pour la farce
200g beouf haché
200g veau haché
200g porc haché
80g beurre
huile d'olive
sel
muscade

Hachez l'oignon. Fondez le beurre dans une casserole, puis faites y blondir l'oignon et rajoutez la viande, remouez bien afin de casser tous les grumeaux. Rajoutez un filet d'huile d'olive de temps en temps si la viande est trop sèche et laissez cuisiner jusqu'à quand tout le liquide a été absorbé. Salez, rajoutez un saupoudeage généreux de muscade (ma touche personnelle: une toute petite pincée de cannelle) et laissez refroidir à temperature ambiante.

Pour les pâtes: versez la farine, les oeufs, l'eau le sel dans un bol et petrissez bien à la main, afin que les oeufs soient bien absorbées. Détachez une pincée de pâtes, roulez-le avec un rouleau, puis passez-le dans la machine à pâtes, épaisseur 4. Si les pâtes s'écaillent, rajoutez de la farine et passez-les à un épaisseur plus épais (3 ou 2). Coupez 100 ronds à l'aide d'un verre de 5cm de diamètre, puis mettez un peu de viande au centre de chaque ronde, fermez-le en 2 (en forme d'une demi-lune), ATTENTION c'est fondamentale de bien sceller les bords, puis roulez la démi-lune autour de votre indez et fermez les extrémités pour former le cappelletto (les enfants sont parfaits pour ça, ils ont la bonne taille!). Si les pâtes deviennent trop séches, mouillez vos doigts avant de former le cappelletto. Ils se cuisinent en environ 10 minutes en bouillon, puis assaisonnez avec une généreuse pincée de Parmesan rapé. BUON APPETITO E BUON NATALE!

Galani, Chiacchere, Crostoli... call them as you like, it's Carnival sweets!


Dear friends, long time no post, but we've been preparing for Carnival, which just started today! Weather keeps staying sunny, a bit cold but it's still nice to walk outside and admire the first masks around. I couldn't help posting the recipe of one of the traditional Carnival sweets, galani.
According to the Catholic calendar, Carnival is the last festivity before Lent (period of spiritual and physical abstinence, preparing to Easter, so no meat, fat food etc), no wonder every food involved is usually fried or very sweet. In any case this is a recipe I found in a Giunti edition recipes box, tested by Granny Liviana, and I can assure that if you roll the dough thin enough, the result is worth the professional ones. Give it a try!

220g flour (quantity may vary according to egg's size)
50g sugar
25g melted butter
1 tbsp milk
1 tbsp grappa (necessary, otherwise the taste won't be the same!)
1 egg
1 pinch salt
vegetable oil (peanut, sunflower or corn) for frying
icing sugar

Beat sugar and the egg until you obtain a foamy mousse; add melted butter, milk, salt, grappa and, if you wish, some vanilla flavour. Keep stirring, then add the flour, little by little, kneading by hand.
Put the dough on your work surface and keep kneading, until it makes little bubbles. Now roll the dough as thin as you can and cut your galani in the shape you prefer (traditional ones are long rectangles, cut by a pastry wheel). Fry the galani in deep oil and drain on paper towels. Sprinkle with icing sugar (the ones in the picture were made at granny Liviana's, who prefer plain sugar) and don't try to resist them!




Chers amis, ça fait plus qu'une semaine que je ne poste aucune recette, mais on était en train de se préparer pour la carnaval... qui vient de commencer! Il fait froid mais beau, il est très agréable de se promener et admirer les premières masques. Je ne pouvais donc manquer de poster la recette d'un des friandises traditionnelles de la carnaval, les Galani (nom utilisé à Venise, chaque région d'Italie utilise un nom différent...). Comme la carnaval est la dernière festivité avant le Carême, toute la nourriture liée à la carnaval est en général très gras, mais comment résister aux fritole et galani? Finalement, ce n'est qu'une fois par an... Essayez en tout cas cette recette, si vous roulez la pâte assez fine, le résultat sera digne des professionels.

220g farine de blé (la quantité pourrait varier selon la taille de l'oeuf)
50g sucre
25g beurre fondu
1 cuillère du lait
1 cuillère de grappa (obligatoire, autrement ils n'auront pas le même parfum!)
1 oeuf
1 pincèe de sel
huile pour la friture (cacahouettes, tournesol ou mais)
sucre (glace)

Montez l'oeuf et le sucre jusqu'à quand vous obtiendrez une mousse ferme, rajoutez le beurre, sel, lait et grappa et, si vous voulez, extrait de vanille. Rajoutez la farine, petit à petit, et pétrissez à la main. Transferez la pâte sur la table ou surface de travail, et continuez à pétrir la pâte jusqu'à quand elle aura des bulles. Maintenant, vous pouvez la rouler, aussi fine que vous pouvez, et la couper avec les formes que vous préférez (les traditionnels sont des rectangles coupés avec une rondelle de cuisine). Friez les galani et posez-les sur du papier, puis saupoudrez avec du sucre glace (les galani de la photos ont été préparez chez "nonna Liviana", qui préfère le sucre "normal"). Maintenant, essayez de ne pas les manger!

I frollini di Natale

Seems like we're going to have a wet Christmas... Acqua alta announced for tomorrow night, which made anticipate the Midnight Mass to 10pm... bring your boots with you if you're coming tomorrow!
And now, a simple recipe for shortbread cookies, with my best wishes to you all for a MERRY CHRISTMAS AND HAPPY 2011!

120g 00 wheat flour
80g whole wheat flour
120g butter
80g sugar
1 egg

Pour the flours in a bowl, add the sugar, butter in pieces and the egg; work energically by hand all of the ingredients until you obtain a round ball. Cover it with cellophane film and put it in the fridge for at least 40 minutes. Take the dough out and roll it out (about 1cm thick) with a rolling pin, then cut your biscuits with the shapes (by the way, apart from Ratti shop at Rialto there's a very nice shop for cooking utensils, selling also silicone moulds and many other accessories at San Stae-Santa Croce district, just beside San Stae ice-cream shop) or with a glass. Put the biscuits on a baking paper and bake for about 10 minutes at 175°C. Let them cool and sprinkle with sugar. Keep them in a tin box and again MERRY CHRISTMAS!


On va passer un Noël humide cette année, ils ont annoncé de l'acqua alta pour la nuit du 24, ce qui a fait anticiper la Messe de minuit à 22h00... emmenez vos bottes si vous prévoyez d'arriver demain! Pour ce soir, une autre soirée avec l'haute marée, je voudrais vous poster une recette toute simple de sablés et en profiter pour vous souhaiter un JOYEUX NOEL ET UN SUPERBE 2011!

120g farine de blé 00
80g farine intégrale
100g beurre
80g sucre
1 oeuf

Verser les farines, le sucre, le beurre en morceaux et l'oeuf dans une terrine, mélanger vigoureusement à la main tous les ingrédients afin d'obtenir une boule. Couvrez-la avec du cellophane et laissez-la dans le frigo pendant au moins 40 minutes. Sortez la pâte et roulez-la avec un rouleau à pâtisserie (environ 1cm d'épaisseur), coupez vos biscuits avec des formes (d'ailleurs, àpart le magasin Ratti à Rialto il y a une belle boutique d'accéssoires de cuisine et pâtisserie à San Stae-Santa Croce, à coté du marchand de glâces San Stae) ou avec l'aide d'un verre. Posez-les sur une feuille de papier sulfurisé et cuisinez au four à 175°C pendant environ 10 minutes. Laissez-les refroidir et saupoudrez avec du sucre. Gardez les sablés dans une boite d'aluminium et encore UN JOYEUX NOEL A VOUS TOUS!
