Amaretto and chocolate parfait



I prepared this parfait a few days ago (found the recipe on December's issue of Cucina Moderna), excuse me for the picture, but when I realized it was unfocused, the parfait was gone already... so I'm adding a festive picture of Casino' di Venezia with its blue sky and stars... to wish all of you a great and Happy New Year 2012!

70g crushed amaretti biscuits
50g dark chocolate drops
90g sugar
20g corn starch
120cc milk
5 egg yolks
240cc milk cream
cocoa to dust

Whisk milk cream in a bowl and put it in the fridge. Cover a plum cake mold with cellophane. Mix sugar and corn starch in a pot; pour milk little by little then add the egg yolks, one by one, stirring well, and warm the mixture avoiding to reach boiling point. Pour the cream into a bowl, plunged into another larger bowl with icing water, in order to cool the cream rapidly.  Whisk the cream. Add the whipped cream with a spatula to the eggs cream, with circular movements, and finally add crushed amaretti and chocolate drops. Pour the mixture into the mold, cover with cellophane and refrigerate in the freezer for at least 12h. When serving, dust each portion with cocoa, and, to make it more festive, add a chocolate coin. Parfait aux amaretti et chocolat
J'ai préparé ce parfait gourmand il y a quelques jours (j'ai trouvé la recette sur le numéro de décembre de Cucina Moderna), désolée pour la photo, mais quand j'ai réalisé qu'elle était floue le parfait était déja parti... alors, je vous poste aussi une photo du Casino de Venise, avec son ciel bleu et les étoiles, pour vous faire tous mes meilleures voeux pour un Joyeux 2012!

70g amaretti émiettés
50g pépites de chocolat
90g sucre
20g amidon de mais
120cc lait
5 jaunes d'oeuf
240cc crème de lait fraiche
cacao pour saupoudrer

Montez la crème de lait pour avoir une chantilly et mettez au frigo. Recouvrez un moule à plumcake avec du cellophane. Mélangez le sucre et l'amidon dans une casserole, versez-y le lait, petit à petit, en remouant, puis les jaunes d'oeuf, un par un. Chauffez la crème sans la faire bouillir. Versez-la dans un bol qui à sa foit est plongée dans un autre bol avec de l'eau glacée, pour faire refroidir la crème rapidement. Montez bien la crème avec des fouettes. Rajoutez la chantilly avec une spatule, avec des mouvements circulaires, puis les amaretti et le chocolat. Versez le mélange dans le moule, couvrez-le avec du cellophane et mettez au congélateur pendant au moins 12h. Au moment de servir, saupoudrez chaque portion avec du cacao et, si vous voulez, posez une pièce de chocolat pour chacun. BUON ANNO A TUTTI!

cappelletti day!


Merry Christmas to you all... time to work on Christmas meal! My task is Christmas lunch tomorrow, so we'll follow the tradition: cappelletti in brodo, roasted capon with mashed potatoes and vegetables, panettone etc. To follow the tradition, we're making home-made cappelletti, according to aunt's Luciana recipe, who's after granny Ada's one and so on... for a team of 3, it's a whole morning work, but usually worth the effort. If you want to try, here's the recipe! I calculate about 20 cappelletti (in stock soup) per person.

For 100 cappelletti
For fresh pasta
400g wheat flour
3 eggs
2 halves eggshells water
a pinch of salt

for filling
200g minced beef
200g minced veal
200g minced pork
1 onion
80g butter
olive oil
nutmeg

Chop the onion. Melt the butter and gently fry it in a high sided pan; add the meat and stir well in order to break all of the lumps. Drizzle with olive oil from time to time and let it cook, no lid, until all of the liquid has been absorbed. Season with salt and generously dust with nutmeg. 3rd generation variation: add a small pinch of cinnamon. Let the filling cool at room temperature.

For pasta: Pour wheat, eggs, water and salt in a bowl and start kneading by hand, you have to work it well so that all of the egg yolks are absorbed. Pinch a piece of dough, spread it with a rolling pin and then pass it through the pasta maker, thick #4. If the foil breaks, add some flour and pass it through a thicker roll (#2 or 3). Cut 100 round with a 5cm diametered glass, then make the cappelletti: put a little filling in the center, close it in half  in a 1/2 moon shape, it's VERY IMPORTANT to perfectly seal the edges, then roll it around your index finger (kids are perfect for this, they have just the right size!) and close the 2 edges in order to obtain the shape in the picture. If the foil gets dry, wet your fingers with water in order to soften the rounds. Cook them in a good stock for about 10 minutes and season with plenty of grated Parmesan cheese. Joyeux Noël à vous tous... aujourd'hui, on prépare les cappelletti pour le déjeuner de demain... à trois, c'est le travail d'une matinée, mais normalement ça vaut la peine! C'est la recette de ma tante Luciana, qui à sa fois suive celle de mamie Ada etc etc et on va en arrière avec les générations... Si vous voulez essayer, voici la recette; moi, je calcule 20 cappelletti par personne (en soupe de bouillon).

Pour les pâtes (environ 100 cappelletti)
400g farine
3 oeufs
1 démi coquilles d'oeuf d'eau
pincèe de sel

Pour la farce
200g beouf haché
200g veau haché
200g porc haché
80g beurre
huile d'olive
sel
muscade

Hachez l'oignon. Fondez le beurre dans une casserole, puis faites y blondir l'oignon et rajoutez la viande, remouez bien afin de casser tous les grumeaux. Rajoutez un filet d'huile d'olive de temps en temps si la viande est trop sèche et laissez cuisiner jusqu'à quand tout le liquide a été absorbé. Salez, rajoutez un saupoudeage généreux de muscade (ma touche personnelle: une toute petite pincée de cannelle) et laissez refroidir à temperature ambiante.

Pour les pâtes: versez la farine, les oeufs, l'eau le sel dans un bol et petrissez bien à la main, afin que les oeufs soient bien absorbées. Détachez une pincée de pâtes, roulez-le avec un rouleau, puis passez-le dans la machine à pâtes, épaisseur 4. Si les pâtes s'écaillent, rajoutez de la farine et passez-les à un épaisseur plus épais (3 ou 2). Coupez 100 ronds à l'aide d'un verre de 5cm de diamètre, puis mettez un peu de viande au centre de chaque ronde, fermez-le en 2 (en forme d'une demi-lune), ATTENTION c'est fondamentale de bien sceller les bords, puis roulez la démi-lune autour de votre indez et fermez les extrémités pour former le cappelletto (les enfants sont parfaits pour ça, ils ont la bonne taille!). Si les pâtes deviennent trop séches, mouillez vos doigts avant de former le cappelletto. Ils se cuisinent en environ 10 minutes en bouillon, puis assaisonnez avec une généreuse pincée de Parmesan rapé. BUON APPETITO E BUON NATALE!

zia luciana's orange marmalade


A few days 'till Christmas... to stay in the mood, I prepared this orange and mandarine marmalade, according to my aunt Luciana's recipe. I don't make preserves, I'm too afraid of botulinum &Co., so I just prepare one or two jars at a time, and consume them immediately. As usual, very easy to make, I personnally like it on bread and butter, but also as a special topping for panna cotta!

For 2 jars
2 oranges and 2 clementines (I go for organic ones) caps (about 250g grams)
about the same weight of brown sugar (as they're not preserves, I use a little less, like 200g for 250g peels)
juice of 1 lemon
water (about 200cc)
cinnamon
cloves

I usually prepare this marmalade to use orange peels from the fruits I eat, so I store the caps in the fridge, in a bowl with a little water, in order to keep them soft until I make the jam. Chop the peels into little squares (about 1/2cm side), then pour them into a high-sided pot with a thick bottom, together with sugar, lemon juice, water (about 1 cup, it should cover the peels mixture), then sparkle with grated cinnamon and add a handful of cloves (about 10). Stir with a spoon and start cooking, low fire, with a lid, for about 1 and 1/2 hours, stirring from time to time. Then roughly mix the mixture with a hand-mixer, in order to keep some whole pieces. Cook for some more minutes, stir well, then pour into the jars and let it cool. You can then put the top and keep it in the fridge. Enjoy!

Confiture d'orange de tante Luciana
Noël est encore plus proche... pour me mettre dans l'esprit, j'ai préparé cette confiture de zestes d'oranges et clémentines, selon la recette de ma tante Luciana. Je ne fais pas de conserves, j'ai trop peur du botuline &Cie, alors j'en prépare qu'un pot ou deux et je les consomme de suite. Comme d'habitude, très facile à préparer, je l'aime particulièrement tartinée, mais aussi comme coulis pour la panna cotta!

Pour 2 pots
"coques" de 2 oranges et 2 clémentines (vivement bio, environ 250g)
le même poids en sucre de canne (comme je n'ai pas besoin de les conserver longtemps, j'en mets un peu moins, genre 200g pour 250g de zestes)
jus d'un citron
eau (environ 200cc)
cannelle
clous de girofle

Normalement, je fais cette confiture pour utiliser les zestes des agrumes que je mange, donc je les garde au frigo dans un bol avec de l'eau pour les garder souples jusqu'à quand je fais la préparation. Hachez les zestes en petits carrés (environ 0,5cm de coté), versez-les dans une casserole au fond épais avec le sucre, le jus de citron, aspergez de cannelle et clous de girofle (une dizaine), couvrez avec l'eau, rémuez puis mettez au feu doux, avec un couvercle, pendant 1h et démi, en rémuant de temps en temps. Plongez un mixeur dans la casserole et mixez le mélange, pas trop finement, il faut laisser des morceaux de zeste entiers. Cuisinez encore pendant quelques minutes, puis versez dans les pots et laissez refroidir. Vous pouvez alors poser le couvercle et mettre au frigo. Bonne dégustation!

baked cod with almonds


Christmas is coming and Winter is approaching... sudden wish of cinnamon, cookies, potatoes... although this season is not being too chilly, it's still nice and cosy to get home and eat something warm! So please try this simple recipe for baked codfish, I bought it at Rialto of course, they sell it without head and innards, but still with skin, which allows you to bake it as it is: it will stay juicy and tender, really delicious.

For 4
a whole codfish (about 900-1000g)
olive oil
salt
50g sliced almonds
20g butter (optional)
8 mid-sized potatoes

Pre-heat the oven at 200°C. Peel and chop the potatoes in dices (about 2cm per side), then pour them onto a baking dish covered with baking paper, season with salt and olive oil, then put them in the oven. After 15 minutes, take out the dish, move the potatoes towards the sides and put the codfish with its skin in the center, season with salt and pour a little olive oil on it. For the almonds, you have 2 choices: if everybody eats them, you can just sparkle them on the fish and let them toast with the fish. Otherwise keep them aside. Now bake everything for another half an hour. If you prefer to keep the almonds aside, toast them a few minutes in a pan, then add the butter without frying it, just the time to melt it. When the fish is ready, you can pour this sauce on each portion. In the picture, I served it with potatoes and chicory. Yummy!



Cabillaud au four aux amandes
L'esprit de Noël arrive... envie de cannelle, gateaux, pommes au four... quoi que cette saison n'est pas trop froide pour l'instant, c'est si bon de rentrer chez soi et de se régaler avec quelques choses de chaud... c'est donc le bon moment pour essayer cette recette simplissime de cabillaud, cuisiné au four tout entier; à Rialto on le vend dèjà sans tête et entrailles, mais avec sa peau, ce qui permet de le mettre au four directement: il gardera sa tendresse et son jus, vous verrez, c'est délicieux.

Pour 4
un cabillaud entier (environ 900-1000g)
huile d'olive
sel
50g amandes effilées
20g beurre (facultatif)
8 pommes de terre de taille moyenne

Pré-chauffez le four à 200°C. Epluchez et coupez les pommes de terres en dés d'environ 2cm de coté, puis mettez-les dans une plaque à four couverte avec du papier à four. Assaisonnez avec sel et huile d'olive, puis mettez au four. Rétirez-les après 15 minutes et déplacez-les vers les cotés du plat, mettez le cabillaud au centre, assaisonez avec sel et huile d'olive. Pour les amandes, vous avez 2 choix: si tout le monde les mange, vous pouvez les repartir sur le poisson afin qu'elles se grillent au four. Autrement, laissez-les à coté et mettez le poisson avec les pommes de terre au four pendant une démi-heure. Quand il est cuit, grillez les amandes dans une poêle, puis rajoutez le beurre sans le frire, juste le temps de le faire fondre. Vous pouvez verser cette sauce sur chaque portion.  Dans la photo, je l'ai servi avec les pommes de terre et de la chicorée sautée. Bon appetit!

Essi buranelli (not a cure for cholesterolemia)



I eventually managed to find THE original recipe for essi buranelli, the delicious pastry biscuits from Burano, from Sara, from Burano (of course), who makes superb ones... as they're so yellow, I imagined there were many eggs, but I didn't think that many! The sugar quantity is sky-rocketing as well, but I wanted to try them the way I was told, and they're actually delicious. I want to try again though by reducing the amount of sugar, to see if the result is at least similar. Besides, it's understandable that traditional pastry from older times are so rich, seeing that you ate them a few times in a year. So, my advice is: prepare them in the old fashion way for special occasions, and go for a lighter version if you think to eat them often.

1 kg wheat flour
300g butter
12 egg yolks + 1 egg white
600g sugar
1 tbsp rhum
vanilla flavour

Cut the butter into pieces and let it soften at room temperature. Beat the egg yolks with sugar, rhum and vanilla, keep the egg white aside (you will need it to soften the dough should it be too hard). Start pouring the flour little by little; when you have put it all, start with the butter, working the dough by hand until you get a ball. Pre-heat the oven at 200°C. Form the S by hand by making a cylindre first, about 10cm long and 3cm large -important Sara's tip: never press to hard the dough- and then giving it the S shape. Bake for 10-12 minutes, they have to get golden but not too dark, otherwise they'll get too hard. Now try them and let me know!

Essi buranelli - cholestérolemiques s'abstenir
Après beaucoup de recherche, j'ai enfin trouvé la recette originale des essi buranelli, les délicieux petits gateaux de Burano, directement de Sara, Buranaise aussi, qu'en fait des super-bons. J'imaginais qu'il y avait beaucoup d'oeufs, vu la couleur de la pâte, mais je ne croyais pas autant! La quantité de sucre est aussi TRES elevé, mais j'ai voulu essayer de les préparer comme on m'a dit, et c'est vrai: ils sont délicieux. Par contre, j'aimerais bien essayer à nouveau en reduisant le taux en sucre, pour voir si on arrive à un résultat comparable. Il faut aussi considérer qu'autrefois on mangeait des friandises beaucoup moins souvent, ce qui explique pourquoi ils sont si riches. Alors, mon conseille: si vous pensez de les préparer une fois pour une occasion spéciale, allez pour la recette originale; si vous pensez de les manger assez souvent, pensez à une version allegée.

1 kg de farine de blé
300g beurre
12 jaunes d'oeuf + 1 blanc
600g sucre
1 cuillère de rhum
vanille

Coupez le beurre en morceaux et laissez-le s'assouplir à temperature ambiente. Battez les jaunes d'oeuf avec le sucre et la vanille, gardez le blanc à part (il vous servira à la fin, si la pâte est trop dure). Rajoutez la farine à la cuillère; quand vous l'avez toute incorporée, commencez avec le beurre, à la main, pétrissez bien jusqu'à quand vous obtiendrez une balle ronde. Pré-chauffez le four à 200°C. Commencez à former vos s: roulez un cylindre d'abord, environ 10cm de longueur et 3 d'épaisseur (conseil de Sara: ne pressez jamais trop fort la pâte) puis donnez-lui la forme de s et posez-les sur une plaque à four avec du papier à cuisson. Mettez au four pendant 10-12 minutes, il faut les faire dorer sans trop les cuire, autrement ils seront durs. Alors, essayez-les et dites-moi!

squillas gratin (canocce al forno)


I just looooove squillas... and this is maybe the best time of the year to buy them, they're just perfectly fleshy, which is needed for this recipe. One way to cook them is simply to steam-cook and garnish with olive oil, but I found this other recipe which is just as simple and has a little more taste. Try it!

20 squillas
a bunch of parsley
about 50g breadcrumbs
2 tbsp olive oil
1/2 lemon juice

We start with the most annoying part: cleaning the squillas. You have 2 methods: one simply consists in taking out the head and making an incision along the back. It's faster, but it will be much more difficult to eat them once they're ready. The other method, which I strongly recommend, needs a short steam cooking (not more than 5 minutes), then you can easily remove all of the shell using scissors (you may keep the head and tail for decoration, but take out the back and belly shells, it will make your life much easier when you eat them). Pre-heat the oven at 200°C. Now we can prepare the filling: simply mix some breadcrumbs with 1/2 a lemon juice, a bunch of parsley and 2 tbsp olive oil, in order to obtain a sticky mixture. If you keep the shell, put the filling inside the cut you have done; if you don't keep it, just lay the squillas on a greased baking dish and cover them with the mixture. Put in the oven for no more than 10 minutes, just the time to let the filling brown. Enjoy!


Gratin de cigales de mer
J'adore les cigales de mer... et maintenant, c'est la période la meilleure pour les acheter, elles sont bien charnues, ce qui nous est nécessaire pour cette recette. Une façon de les préparer est de les cuisiner à la vapeur, tout simplement, et les assaisoner avec de l'huile d'olive; elles sont déjà très bonnes comme ça. Par contre, j'ai trouvé cette recette qui, tout en restant très simple, rajoute une pointe de saveur. Donc, la voici!

20 cigales de mer
environ 50g de chapelure
le juice d'un démi-citron
huile d'olive
persil

On commence avec la partie la plus ennuyeux: nettoyer les cigales! Là, vous avez 2 choix: la plus rapide consiste tout simplement en enlever la tête et pratiquer une incision aulong du ventre. Par contre, si vous ne voulez pas trop galérer une fois qu'elles sont prêtes, je vous conseille de les passer d'abord à la vapeur pour 5 minutes, puis enlever la tête et couper à l'aide des ciseaux tout le carapace; vous pourrez garder la queue comme décoration. Pré-chauffez le four à 200°C. Maintenant vous pouvez préparer le remplissage: mixez la chapelure avec le jus de citron, l'huile et le persil àfin d'obtenir un mélange légèrement collant. Si vous avez choisi la première option, vous pourrez remplir le dos avec le mélange, en le mettant dans le creux que vous avez fait; si vous avez tout enlevé, vous pourrez couvrir vos cigales une fois les avoir posées sur un plat à four graissé avec de l'huile d'olive. Mettez au four pendant 10 minutes, juste le temps de faire dorer le remplissage, et servez. Bonne dégustation!

red calamari stew



Hallo!
Time for some fish cooking... there were some delicious squillas at Rialto market (next post), but also calamari, whose recipe I'm posting today. It's not exactly the traditional Venetian way to cook it, but I like this recipe very much, so here it is:

For 2
4 calamari
1 can tinned tomato pulp
4 potatoes
1/2 onion
white wine
oregan
olive oil

Gently wash and bone the calamari (you have to take out the transparent bone inside the calamari's "head" as well as the innards), then cut them into slices. Peel the potatoes and chop them into pieces, finely chop the onion. Stir-fry the onions in a little olive oil, then add the calamari in the center of the pan, then the potatoes, forming a ring around the calamari, sparkle with white wine then pour the tinned tomatoes in the center of the pan. Add salt, gently stir without changing the position of the calamari/potatoes, add some oregan then cover with a lid and let it cook for about 40-45 minutes, the time for the sauce to get creamy -not too liquid, not too dry. Serve hot. Buon appetito!

Calamars en rouge

Bonjour! C'est bien le temps de préparer du poisson... il y avait des superbes cigales de mèr au marché (dans le prochain post), mais aussi des bon calamars, ce que j'ai préparé cette fois-ci. Ce n'est pas la recette traditionnelle vénitienne, mais j'aime beaucoup, c'est pourquoi je partage cette recette. La voici:

Pour 2
4 calamars
1 cannette de tomates hachés
4 pommes de terre
1/2 oignon
vin blanc
huile d'olive
oregan

Lavez doucement les calamars et enlevez-leurs les os (c'est le tige transparent dans la "tête") et les entrailles, puis tranchez-les en rondelles. Pelez les pommes de terre et hachez-les en morceaux, hachez l'oignon. Sauté l'oignon dans un filet d'huile d'olive, puis rajoutez les calamars au milieux de la poêle, baignez avec du vin blanc puis rajoutez les pommes de terre autour, en formant un anneau. Versez enfin les tomates sur les calamars, salez, aspergez d'origan puis remuez gentilement sans changer de position les calamars/pommes de terre, puis couvrez avec un couvercle et laissez cuisiner
pendant 40-45 minutes au feu doux, le temps pour la sauce de s'épaissir (pas trop liquide, pas trop sèche). Servez chaud. Bon appetit!
